After the winter fun during the day and skiing, sledding, snoring or anything that makes us happy in the snow, in the evening when we gather around a set table it is appropriate to finally serve the Snow Queen a Christmas cake that will delight us with a creamy filling , a hint of coconut and a delicious biscuit will completely overwhelm you.

Cookie baking tips

Line a baking sheet with parchment paper and butter the bottom but not the edges. We cut a wide and long strip around the perimeter so that we can “dress” the baking pan. Our baking pan has a diameter of 26 centimetres.

In order not to blow up the biscuit during baking, before baking, we put a dry macaroni in the biscuit mass, which will act as a “chimney”; that the steam is constantly dissipated during baking. Then, of course, we remove the macaroni.

We always bake the biscuit the day before. Cut into waffles just 12 hours after baking.

7 eggs

250 g of AGRAGOLD sugar

125 g ground almonds

130 grams of flour

pinch of salt

5 ml Amaretto liqueur

Cream and coating:

650 ml sweet cream

350 g of mascarpone cheese

300 g coconut milk

250g white chocolate

70 g coconut flour

50 g AGRAGOLD powdered sugar

Decoration:

raspberries

Proteins with sugar that is only added when the snow is already nice and foamy and a pinch of salt is whipped into hard snow. In another bowl, mix the egg yolks with the amaretto and stir the mixture into the snow. Slowly add the ground almonds and finally add the sifted flour.

Bake at 170 degrees for 45 minutes.

Let the biscuit sit overnight, then cut in half to make cake waffles.

For the cream, mix the mascarpone and sugar with a hand mixer. Add melted white chocolate. In another bowl, whip the cream and mix both masses. Also add a few tablespoons of coconut milk.

Brush the biscuit waffles with coconut milk and top with whipped cream. Sprinkle with coconut flour and garnish.

Ingredients:

115g softened butter

70 grams of granulated sugar

200 grams of flour

Decoration as desired

Preparation:

In a large bowl, using an electric mixer, mix the sugar and softened butter to form a smooth mixture. Stir in the flour and shape the dough into walnut-sized balls. Bake at 170 degrees for 15 minutes.

Preparation:

Line a baking sheet with parchment paper. Crush the cookies in a blender. You can also use a plastic bag and crush it with a wooden roller. In a large bowl, mix together the crushed biscuits, mascarpone, vanilla, and salt. Place heaps of dough on a baking sheet with a spoon. Place the pan in the freezer for ten minutes.

In the meantime, mix the coconut fat with the white chocolate and melt over a steam bath. Dip the pralines in white chocolate and place on a wire rack or parchment paper. Then put them back in the freezer for ten minutes.
