The soup is prepared from red lentils, but we also know several other types – green, black. Lentils are an excellent food that not only fills you up, but is also extremely healthy.

Lentils contain a lot of fiber and minerals and a lot of easily digestible protein, so they are also an ideal food for vegans. However, since there are many diseases and colds in winter, lentils are also an ideal food during this period as they strengthen the immune system.

You can make the soup more or less spicy. If you add more cayenne pepper to the soup, I suggest garnishing the soup with a spoonful of yogurt before serving, which softens the heat and further enriches the soup.

140 g red lentils

1 tablespoon olive oil

1/2 brown onion

1 clove of garlic

1/2 teaspoon ground coriander

1 teaspoon ground ginger

1/4 teaspoon turmeric

1/4 teaspoon cinnamon

1 teaspoon cayenne pepper

1 tablespoon tomato concentrate

5 dcl vegetable soup base




Heat the olive oil in the shrimp and fry the chopped onion on it. When soft but not blotchy, add the chopped garlic, tomato paste, and any spices and cook for a further 2 minutes.

Add the read, rinsed and drained lentils to the shrimp and pour over the vegetable soup base. Cook for 20-25 minutes for the lentils to cook. When the lentils are cooked, add salt and taste if necessary. The longer you cook the lentils, the creamier the soup will be. You can keep the soup if you want.
