We can make the cake of all cakes by ourselves

In some very cold parts of the world, they prepare for winter by eating more high-calorie foods in advance to help with a bad cold. It’s usually not that bad here and in our kitchen we strive for healthy and simple recipes. Sometimes, however, we need a high-calorie meal during physical exertion, which ensures that our body is supplied with energy for a long time. But today’s cake will be perfect for this.

cake reform By name, it was by far the most numbered and celebrated cake in our family. This recipe has already gone to some housewives. He is from Serbia. However, its ingredients are very simple, eggs, nuts, butter and a few small additives for better taste. So the cake is also modern gluten-free with butter custard and a real classic. Healthy walnuts and butter for winter and cold.

For the cake of all cakes we need (cake diameter 26 cm):

Cream:
12 egg yolks
220g brown sugar
vanilla sugar
spikes of rum
pinch of salt
100g melted chocolate
300 g butter at room temperature
Form 5 pieces (dough):
12 egg whites (snow)
200 grams of brown sugar
2 tablespoons starch
300 g ground walnuts

Preparation of the reform cake:

First separate the yolk from the white. Put the yolks, sugar and other ingredients for the cream, except chocolate, in an ovenproof dish. Give them a quick stir and set the bowl over the pot of water. Whisk everything with a whisk and stir until the mixture thickens (pudding density approx.). Finally, add the melted chocolate to the cream and leave to cool. Let’s start making waffles. Beat egg white and sugar until stiff. Add walnuts and starch to the snow.

Wrap the cake ring in parchment paper and place one-fifth of the dough on top. If we have more rings, we can bake two waffles at the same time. Smooth out the dough, press flat (easiest with a dough card) and place in the oven at 180 degrees for about 10 minutes so that it browns nicely. So bake 5 waffles and let them cool down. Remove from the rings after cooling.

Finish with egg custard. Add the cooled butter, previously frothed well by machine or by hand with a whisk. Spread cream on each cookie and place a new cookie on top. Leave some of the cream for the top layer of cake. When everything is covered, sprinkle with walnuts, if you like.
